Ingredients

  • 1 lb flank steak or sirloin (or your favorite cut)
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/4 cup sour cream
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard
  • 2 tablespoons fresh parsley, finely chopped
  • 1 garlic clove, minced
  • 1 tablespoon lemon juice
  • 8 small brioche buns (or slider rolls)
  • 1/4 cup grated cheese (optional, like cheddar or Swiss)
  • Fresh parsley or chives (for garnish)

Instructions

  1. Preheat grill or skillet to medium-high heat.
  2. Season steak with salt and pepper. Heat olive oil and butter in a skillet or grill pan over medium-high. Sear steak 3–4 minutes per side for medium-rare, or to desired doneness. Rest for 5 minutes before slicing.
  3. While the steak cooks, prepare the garlic herb sauce: In a small bowl, mix sour cream, mayo, Dijon mustard, parsley, garlic, lemon juice, salt, and pepper. Stir until smooth.
  4. Toast the brioche buns until golden.
  5. Slice steak thinly against the grain.
  6. Spread a generous amount of garlic herb sauce on the bottom half of each toasted bun. Layer with steak slices, top with cheese (optional), and close with the bun top.
  7. Serve immediately, garnished with extra herbs or chives.
