  • 1 ½ lbs beef stew meat or sirloin, cut into cubes
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 jalapeño, sliced (optional for extra heat)
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can diced tomatoes with juice
  • 1 (6 oz) can tomato paste
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Toppings: sour cream, shredded cheddar, green onions, jalapeño slices

Instructions

  1. Heat oil in a large pot and brown the steak cubes on all sides.
  2. Toss in onion, garlic, bell pepper, and jalapeño. Sauté until softened.
  3. Stir in chili powder, cumin, paprika, and tomato paste. Let it toast for 1–2 minutes before adding beans, diced tomatoes, and broth.
  4. Simmer uncovered on low heat for 45–60 minutes, stirring occasionally.
  5. Ladle into bowls, top with sour cream, cheese, green onions, and jalapeño slices.

Notes

  • For extra heat, keep the seeds in the jalapeño.
  • Letting the chili sit for a few hours or overnight enhances the flavors.
  • This chili can be frozen for up to 3 months.
