  • 2 large eggplants, halved lengthwise
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 2 cups fresh spinach
  • 1 cup ricotta cheese
  • 1/2 cup grated parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon chili flakes
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C). Scoop out part of the eggplant flesh, leaving a sturdy shell. Brush the eggplant halves with olive oil and season lightly with salt and pepper.
  2. Heat a drizzle of olive oil in a skillet over medium heat. Sauté garlic for 30 seconds until fragrant. Add spinach and cook until wilted. Remove from heat and mix with ricotta cheese, parmesan cheese, Italian seasoning, chili flakes, salt, and black pepper.
  3. Fill each eggplant half generously with the spinach ricotta mixture. Top with shredded mozzarella cheese for a rich cheesy crust.
  4. Place the stuffed eggplants in a baking dish and bake for 30-35 minutes until tender and bubbling with golden brown cheese on top.
  5. Sprinkle with fresh parsley before serving hot with couscous, pasta, roasted potatoes, or a crisp salad.
