A cozy and healthy spinach lentil soup with butter beans, perfect for an easy family dinner or a meatless comfort meal.

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 cup lentils, rinsed
  • 1 can butter beans, drained and rinsed
  • 4 to 5 cups vegetable broth
  • 3 cups fresh spinach
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, then cook until softened. Stir in garlic.
  2. Pour in the lentils, broth, thyme, smoked paprika, salt, and pepper. Stir and bring to a boil.
  3. Lower the heat and simmer for 25 to 30 minutes, until lentils are tender.
  4. Stir in butter beans and spinach, then cook for 5 more minutes until spinach wilts.
  5. Add lemon juice, adjust seasoning, and serve warm.

Notes

  • Use fresh spinach for best texture.
  • Adjust broth quantity for preferred thickness.
  • Add a pinch of red pepper flakes for extra heat.
