Spinach Feta Quesadillas

A quick and delicious Mediterranean-inspired quesadilla filled with spinach, feta, and mozzarella.

Ingredients

  • 4 large flour tortillas
  • 1 cup fresh spinach, chopped
  • ½ cup feta cheese, crumbled
  • 1 cup shredded mozzarella or Monterey Jack
  • ½ red onion, diced
  • ½ cup sautéed mushrooms (optional)
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh chopped parsley or green onions for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Add red onion and mushrooms, cooking until softened. Toss in spinach and cook until wilted.
  2. Remove veggies from heat and stir in feta, garlic powder, oregano, salt, and pepper.
  3. Lay tortillas flat, sprinkle mozzarella evenly, then spread the spinach mixture over one half. Fold tortillas over.
  4. In a clean skillet over medium heat, cook each quesadilla 2–3 minutes per side until golden brown.
  5. Let cool slightly, slice into wedges, and garnish with parsley or green onions. Serve warm.

Notes

  • Optional mushrooms add extra flavor.
  • Serve with a side of salsa or sour cream.
