Flaky, buttery, savory and packed with creamy spinach goodness, these spinach feta puff pastry squares are the perfect appetizer or snack.

Ingredients

  • 2 sheets puff pastry, thawed
  • 2 cups fresh spinach, finely chopped
  • 200g (7 oz) feta cheese, crumbled
  • 1/2 cup ricotta cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 egg (for egg wash)
  • 1 tablespoon sesame seeds
  • 1 teaspoon black sesame seeds
  • Fresh parsley, chopped (optional)

Instructions

  1. Preheat oven to 190°C / 375°F. Line a baking tray with parchment paper.
  2. Heat olive oil in a pan over medium heat. Add garlic and sauté for 30 seconds.
  3. Add chopped spinach and cook until wilted. Remove from heat and let cool slightly.
  4. In a bowl, mix spinach, feta, ricotta, egg, oregano, salt, and pepper.
  5. Roll out puff pastry slightly and cut into equal squares.
  6. Spoon filling onto one pastry sheet, spreading evenly. Place second sheet on top and gently press.
  7. Cut into squares and transfer to baking tray.
  8. Brush tops with egg wash and sprinkle sesame seeds.
  9. Bake for 20–25 minutes until golden, flaky, and crisp. Cool slightly before serving.

Notes

  • Drain spinach well to prevent soggy pastry.
  • Chill assembled pastry for 10 minutes before baking for extra flakiness.
  • Add a pinch of chili flakes for a slight kick.
