1 package frozen spinach (10 oz), thawed and drained
1 cup shredded mozzarella cheese
4 oz cream cheese, softened
¼ cup sour cream
¼ cup grated Parmesan cheese
1 garlic clove, minced
Salt & pepper to taste
½ tsp crushed red pepper flakes (optional)
24 mini phyllo shells or 6 phyllo sheets (cut into squares)
Olive oil spray (if using phyllo sheets)
Instructions
Prep the creamy filling by mixing spinach, cream cheese, sour cream, mozzarella, Parmesan, and garlic. Season with salt, pepper, and red pepper flakes.
Build your crispy base by layering and cutting phyllo sheets into squares, spraying lightly with olive oil. Press into a mini muffin tin.
Fill each cup with the cheesy spinach mixture.
Bake at 375°F (190°C) for 15–18 minutes until golden and bubbly.
Garnish with more Parmesan and crushed red pepper. Serve warm.
