SPINACH & CHEESE STUFFED CHICKEN BREAST

Juicy, cheesy, garlicky and irresistibly creamy spinach and cheese stuffed chicken breast.

Ingredients

  • 4 large boneless, skinless chicken breasts
  • Salt and black pepper to taste
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 1 cup fresh spinach, finely chopped
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella
  • 1/4 cup grated Parmesan
  • 2 cloves garlic, minced
  • Pinch red pepper flakes (optional)
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon butter
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Carefully slice a pocket into each chicken breast without cutting all the way through.
  2. Season chicken inside and out with salt, pepper, paprika, and Italian seasoning.
  3. In a bowl, mix spinach, cream cheese, mozzarella, Parmesan, garlic, and red pepper flakes.
  4. Stuff the mixture evenly into each chicken breast and secure with toothpicks if needed.
  5. Heat olive oil in a large skillet over medium-high heat.
  6. Sear chicken 5–6 minutes per side until golden brown.
  7. Remove chicken briefly. In the same pan, add butter, broth, and cream. Simmer 3–4 minutes until slightly thickened.
  8. Return chicken to the pan, spoon sauce over top, cover and cook 6–8 minutes until fully cooked through.
  9. Garnish with fresh parsley and serve hot.

Notes

  • Don’t overfill the chicken to prevent leaking.
  • Let chicken rest 5 minutes before slicing.
  • Add sun-dried tomatoes for extra flavor.
