  • 1/4 cup shredded mozzarella or cheddar cheese
  • 1 tbsp milk (optional for fluffiness)
  • Salt & black pepper to taste
  • 1 tsp olive oil or butter
  • Optional: sliced tomatoes for serving

Instructions

  1. In a bowl, beat the eggs with milk, salt, and pepper until well combined for that fluffy breakfast vibe and easy morning prep.
  2. Heat olive oil or butter in a nonstick pan over medium heat. Add chopped spinach and cook for 1–2 minutes until wilted.
  3. Pour the egg mixture over the spinach and swirl to spread evenly. Cook until edges set.
