3 medium sweet potatoes, halved lengthwise
2 tablespoons olive oil
Salt and black pepper to taste
1/2 lb ground beef or turkey
1 small onion, finely diced
2 garlic cloves, minced
1 teaspoon smoked paprika
1/2 teaspoon cumin
1/4 teaspoon chili flakes (adjust to taste)
1 ripe avocado, diced
1/4 cup crumbled feta or soft goat cheese
2 tablespoons chopped fresh parsley or cilantro
1 tablespoon toasted sesame seeds
2 tablespoons warm honey (for drizzling)
Instructions
Preheat oven to 400°F (200°C). Brush sweet potatoes with olive oil, season with salt and pepper, and roast cut-side up for 35–40 minutes until tender and caramelized.
Meanwhile, heat a skillet over medium heat. Sauté onion until soft, then add garlic and cook 30 seconds.
Add ground meat, paprika, cumin, chili flakes, salt and pepper. Cook until browned and flavorful.
Spoon the savory mixture over the roasted sweet potatoes.
Top with avocado cubes, crumbled cheese, herbs, and sesame seeds.
Finish with a slow drizzle of warm honey just before serving.
Notes
Serve with a fresh green salad.
Add a dollop of yogurt or sour cream.
Great as a meatless main with lentils instead of meat.
