- 1 lb ground beef
- ½ cup crushed tortilla chips
- ½ cup shredded cheddar cheese
- 1 large egg
- ¼ cup finely diced red bell pepper
- 2 tbsp chopped fresh cilantro
- 1 tsp chili powder
- 1 tsp cumin
- ½ tsp smoked paprika
- ½ tsp garlic powder
- Salt & pepper to taste
- Olive oil for cooking
- Mix ground beef, tortilla chips, cheese, egg, bell pepper, cilantro, and spices in a bowl.
- Roll mixture into golf-ball-sized meatballs.
- Heat olive oil in a skillet and brown meatballs on all sides.
- Lower heat, cover, and cook until fully done. Add extra cheese to melt.
- Garnish with cilantro and serve with lime wedges and tortilla chips.
Notes
- For extra spice, add chopped jalapeños.
