Spicy Mexican Meatballs are bold, beefy, and fiery, making them the perfect party appetizer or game day snack.

Ingredients

  • 1 lb ground beef (80/20 blend for max flavor)
  • 1/2 cup crushed tortilla chips
  • 1/2 cup shredded cheddar cheese
  • 1 egg
  • 2 tbsp chopped red onion
  • 1 clove garlic, minced
  • 1 jalapeño, finely chopped (seeds in for extra heat)
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • Salt & pepper to taste
  • Optional: 1 tbsp hot sauce (for real spice lovers!)

Instructions

  1. In a large bowl, mix ground beef, crushed tortilla chips, cheddar, onion, garlic, jalapeño, egg, and seasonings.
  2. Form into 1.5-inch balls and place on a lined baking tray.
  3. Bake at 400°F (200°C) for 18–20 minutes until golden brown and fully cooked.
  4. While hot, sprinkle more shredded cheddar on top so it melts right in. Add sliced jalapeños, fresh cilantro, and crushed chips.
  5. Serve hot with sour cream, chipotle mayo, or spicy salsa for dipping.
