  • 4 ears of fresh corn, cut into thick rounds
  • 2 tbsp mayonnaise
  • 1 tbsp sour cream
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • 1 tsp garlic powder
  • ¼ cup crumbled cotija or feta cheese
  • 1 tbsp fresh lime juice
  • 1 tbsp chopped cilantro or parsley
  • Salt and pepper to taste
  • Olive oil for roasting

Instructions

  1. Preheat oven to 425°F. Carefully slice corn into thick bite-sized rounds.
  2. Place corn rounds on a baking sheet. Drizzle with olive oil, then sprinkle with chili powder, garlic powder, paprika, salt, and pepper.
  3. Roast for 20-25 minutes, flipping halfway, until charred and slightly crispy.
  4. In a small bowl, whisk together mayo, sour cream, and lime juice. Drizzle over roasted corn while hot.
  5. Sprinkle crumbled cotija and fresh herbs over the top.
