- 2 cups rotini pasta (or any short pasta)
- 1 lb smoked sausage, sliced into rounds
- 1 tbsp olive oil
- 1/2 onion, diced
- 1/2 orange bell pepper, sliced
- 2 cloves garlic, minced
- 1/3 cup BBQ sauce
- 2 tbsp honey
- 1/2 tsp red pepper flakes (adjust to heat level)
- 1/4 cup reserved pasta water
- Salt & black pepper, to taste
- Fresh parsley, chopped (for garnish)
- Cook pasta in salted water until al dente, drain and reserve 1/4 cup of pasta water.
- Heat olive oil in a skillet and pan-fry sausage slices until golden and crisp on the edges.
- Add onions, bell peppers, and garlic to the same skillet. Sauté until softened and aromatic.
- Pour in BBQ sauce, honey, red pepper flakes, and reserved pasta water. Simmer for a few minutes until everything gets sticky, spicy, and glossy.
- Add cooked pasta into the skillet and toss to coat in the sauce. Garnish with fresh parsley and serve hot.
