1 lb large shrimp, peeled and deveined
12 oz smoked sausage, sliced
1 lb baby red potatoes
3 ears corn, cut into thirds
4 cups seafood or chicken broth
1 cup crushed tomatoes
2 tbsp unsalted butter
4 garlic cloves, minced
2 tbsp Cajun seasoning
1 tsp Old Bay seasoning
1 tsp smoked paprika
½ tsp cayenne pepper (optional)
2 hard-boiled eggs, halved
2 tbsp fresh parsley, chopped
Salt and freshly cracked black pepper, to taste
Instructions
Bring the broth to a boil in a large pot. Add the baby potatoes and cook for 12 minutes, then stir in the corn and cook for another 6 minutes.
While the vegetables cook, sauté the sliced smoked sausage in butter until browned. Add the garlic and cook for 1 minute until fragrant.
Stir the crushed tomatoes, Cajun seasoning, Old Bay, smoked paprika, cayenne, salt, and pepper into the pot. Add the browned sausage and simmer for 8–10 minutes.
Add the shrimp and cook for 2–3 minutes until pink and tender. Stir in the remaining butter for a rich, glossy finish.
Ladle into bowls and top with halved hard-boiled eggs, chopped parsley, and extra Cajun seasoning. Serve hot with crusty bread.
Notes
Adjust the cayenne pepper to control the spice level.
Use fresh shrimp for the best texture.
