- 2 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup buffalo sauce
- 1 cup shredded mozzarella cheese
- ½ cup crumbled blue cheese
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and black pepper to taste
- 2 tbsp olive oil
- 2 tbsp chopped fresh chives
- Optional: ranch or blue cheese dressing for dipping
- Preheat oven to 400°F. Toss chicken with olive oil, garlic powder, smoked paprika, salt, and pepper. Spread on a lined baking sheet.
- Bake for 18-22 minutes until chicken is fully cooked and slightly golden. Keep oven on.
- Toss baked chicken in buffalo sauce until fully coated. Return to baking sheet.
- Sprinkle mozzarella cheese over chicken. Bake 5-7 more minutes until cheese melts.
- Top with blue cheese and chives. Serve hot with dipping sauce.
