- 2 tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp chili flakes (optional for heat)
- 2 medium sweet potatoes, peeled & cubed
- 2 celery stalks, chopped
- 3/4 cup dried green or brown lentils, rinsed
- 4 cups vegetable broth
- 1 cup water
- Salt & pepper to taste
- 1/2 cup coconut milk (plus more for drizzle)
- Fresh cilantro, chopped
- Toasted pumpkin seeds for garnish
- In a large pot, heat olive oil over medium. Add diced onion, garlic, and ginger. Sauté until fragrant and golden.
- Stir in cumin, smoked paprika, and chili flakes. Let the spices bloom for 1-2 minutes.
- Add sweet potatoes, celery, lentils, broth, and water. Season with salt and pepper. Bring to a boil, then reduce heat and simmer for 25–30 minutes.
- Stir in coconut milk and simmer for 5 more minutes.
- Ladle soup into bowls, drizzle with coconut milk, sprinkle toasted pumpkin seeds, and top with chopped cilantro.

- This soup can be stored in the refrigerator for up to 5 days.
- Feel free to adjust the spices according to your taste.
