A cozy and nourishing spiced sweet potato lentil soup perfect for cold weather.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp chili flakes (optional for heat)
  • 2 medium sweet potatoes, peeled & cubed
  • 2 celery stalks, chopped
  • 3/4 cup dried green or brown lentils, rinsed
  • 4 cups vegetable broth
  • 1 cup water
  • Salt & pepper to taste
  • 1/2 cup coconut milk (plus more for drizzle)
  • Fresh cilantro, chopped
  • Toasted pumpkin seeds for garnish

Instructions

  1. In a large pot, heat olive oil over medium. Add diced onion, garlic, and ginger. Sauté until fragrant and golden.
  2. Stir in cumin, smoked paprika, and chili flakes. Let the spices bloom for 1-2 minutes.
  3. Add sweet potatoes, celery, lentils, broth, and water. Season with salt and pepper. Bring to a boil, then reduce heat and simmer for 25–30 minutes.
  4. Stir in coconut milk and simmer for 5 more minutes.
  5. Ladle soup into bowls, drizzle with coconut milk, sprinkle toasted pumpkin seeds, and top with chopped cilantro.

Notes

  • This soup can be stored in the refrigerator for up to 5 days.
  • Feel free to adjust the spices according to your taste.
  • For a spicier version, add more chili flakes.
