1 cup unsalted butter, softened
2 cups granulated sugar
5 large eggs
2 1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup buttermilk
2 tsp vanilla extract
1 1/2 cups chopped pecans, toasted
For the Frosting:
1 cup unsalted butter, softened
16 oz cream cheese, softened
6 cups powdered sugar
2 tsp vanilla extract
1/2 cup chopped pecans, for garnish
Instructions
Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
In a large bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
Gradually add dry ingredients to the butter mixture, alternating with buttermilk. Mix in vanilla and fold in chopped toasted pecans.
Divide batter evenly among prepared pans. Bake 25–30 minutes or until a toothpick inserted in the center comes out clean. Let cool completely before frosting.
For frosting: Beat cream cheese and butter together until creamy. Gradually add powdered sugar, then vanilla. Beat until smooth.
Frost each layer, then coat the outside of the cake. Press chopped pecans along the bottom sides for garnish.
Notes
Best served chilled or at room temperature.
Perfect with hot tea or cold milk.
Add a drizzle of honey or maple syrup for extra decadence.
Toast pecans before adding to enhance flavor.
