  • 6 fresh ripe peaches, peeled and sliced
  • 1 cup granulated sugar
  • ½ cup light brown sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp nutmeg
  • 2 tsp lemon juice
  • 2 tbsp cornstarch
  • 1 stick (½ cup) unsalted butter, melted
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • ¼ tsp salt
  • 1 cup milk
  • Optional: vanilla ice cream for topping

Instructions

  1. In a saucepan, combine peaches, both sugars, lemon juice, cinnamon, and nutmeg. Simmer until juicy and thickened.
  2. Stir in cornstarch and bring to a light boil.
  3. In a separate bowl, whisk together flour, baking powder, salt, and milk until smooth.
  4. Pour melted butter into a baking dish or skillet, then add batter (do not stir). Spoon peach mixture over batter.
  5. Bake at 375°F (190°C) for 40–45 minutes, until top is golden and crisp.

Notes
