Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt & pepper to taste
  • 1/2 tsp paprika
  • 2 tbsp olive oil
  • 1 large yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup sour cream
  • 1/2 cup chicken broth
  • 1 tsp onion powder
  • 1 tbsp fresh parsley, chopped (plus more for garnish)

Instructions

  1. Season chicken with salt, pepper, and paprika. Sear in hot olive oil over medium-high heat, 4–5 minutes per side, until golden brown.
  2. In the same pan, add sliced onions and cook until soft and golden. Add garlic and cook 1 minute.
  3. Reduce heat and stir in sour cream, chicken broth, onion powder, and parsley.
  4. Return chicken to the skillet, nestling it into the sauce and onions. Cover and simmer 8–10 minutes until cooked through.
  5. Spoon sauce and onions over the chicken, top with fresh parsley, and serve hot.

Notes

  • Use full-fat sour cream for best results.
  • Adjust seasoning to taste.
  • Serve with rice or mashed potatoes.
