A no-bake summer dessert combining s’mores flavors with edible cookie dough and ice cream in a rolled-up treat.

Ingredients

  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar
  • 2 tbsp granulated sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract
  • ¾ cup mini chocolate chips
  • 2 cups vanilla ice cream, softened
  • 1 cup whipped topping or whipped cream
  • ½ cup mini marshmallows
  • ½ cup mini chocolate chips
  • ½ cup chocolate ganache or chocolate sauce
  • Mini marshmallows (for topping)
  • Crushed graham crackers (for topping)

Instructions

  1. Cream butter and sugars, then mix in milk and vanilla before folding in flour and chocolate chips.
  2. Press cookie dough evenly into a parchment-lined rectangle.
  3. Fold softened ice cream with whipped topping, marshmallows, and chocolate chips.
  4. Spread filling over cookie dough and carefully roll into a log.
  5. Freeze until firm, then drizzle with chocolate sauce and top with marshmallows and graham crumbs.

Notes

  • Use heat-treated flour for safe edible cookie dough.
  • Soften ice cream slightly for easier mixing.
