A cozy and hearty Smoky Sausage White Bean Soup perfect for chilly evenings, combining smoked sausage, white beans, and greens in a savory broth.

Ingredients

  • 1 tbsp olive oil
  • 12 oz smoked sausage (kielbasa or andouille), sliced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 3 medium potatoes, peeled and diced
  • 1 can (15 oz) white beans, drained and rinsed
  • 4 cups chicken broth
  • 2 cups kale, chopped (or spinach)
  • 1/2 tsp thyme
  • Salt & black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat olive oil and sauté sausage slices until golden and slightly crisp.
  2. Add onions and garlic, cooking until soft and fragrant.
  3. Stir in potatoes, white beans, broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are tender.
  4. Toss in chopped kale and simmer another 5 minutes until wilted.
  5. Taste and adjust seasoning. Garnish with fresh parsley and serve.

Notes

  • Serve with crusty bread for a complete meal.
  • Feel free to substitute kale with spinach if preferred.
