6 large firm apples (Granny Smith, Honeycrisp, or Fuji), peeled, cored & sliced
½ cup brown sugar (light or dark)
¼ cup granulated sugar
1½ tsp cinnamon
¼ tsp nutmeg
¼ tsp salt
1 tbsp cornstarch
¼ cup apple juice (or water)
3 tbsp unsalted butter, cut into pieces
1 tsp vanilla extract
Instructions
Peel, core, and slice apples into even wedges. Place them into a greased slow cooker.
In a bowl, whisk together brown sugar, granulated sugar, cinnamon, nutmeg, salt, and cornstarch. Sprinkle the mixture over the apples and toss to coat evenly.
Dot the apples with butter pieces and drizzle with apple juice. Cover and cook on LOW for 3 hours (or HIGH for 1½–2 hours), stirring halfway through until tender and glossy.
Stir in vanilla extract just before serving. Serve warm — spooned over pancakes, pork chops, oatmeal, or vanilla ice cream.
Notes
Add 1 tbsp maple syrup or caramel for extra richness.
Swap butter for coconut oil to make it dairy-free.
For a baked texture, broil for 5 minutes after slow cooking to caramelize the edges.
