- 1 lb ground beef
- 2 packs instant ramen noodles (discard seasoning packets)
- 1 red bell pepper, thinly sliced
- 1 cup shredded carrots or matchstick carrots
- 1/2 cup green onions, chopped (plus more for garnish)
- 1/3 cup soy sauce
- 1/4 cup hoisin sauce
- 2 tbsp brown sugar
- 2 tsp sesame oil
- 1 tsp garlic powder
- 1/2 tsp ground ginger
- 1/2 cup beef broth or water
- Sesame seeds (optional garnish)
- Brown the ground beef in a skillet until fully cooked, breaking it into small crumbles.
- Add the cooked beef, soy sauce, hoisin sauce, brown sugar, garlic powder, ginger, sesame oil, and broth to the slow cooker. Mix well.
- Add the sliced red bell peppers and carrots. Cover and cook on LOW for 3–4 hours or HIGH for 1.5–2 hours.
- 15 minutes before serving, break the ramen noodles into chunks and stir them into the slow cooker. Cover and let the noodles soften.
- Garnish with chopped green onions and sesame seeds. Serve hot.
Notes
- Discard the seasoning packets from the ramen noodles.
- Adjust the cooking time based on your slow cooker settings.
