- 1.5 lbs beef stew meat, cut into chunks
- 1 cup pearl barley, rinsed
- 4 cups beef broth
- 2 cups water
- 3 carrots, chopped
- 2 celery stalks, chopped
- 2 potatoes, diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- Optional: chopped parsley for garnish
- Add beef chunks, barley, carrots, celery, onion, potatoes, and garlic into your slow cooker.
- Pour in beef broth and water, then stir in tomato paste, thyme, salt, and pepper.
- Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until beef is tender and barley is fully cooked.
- Taste and adjust seasoning if needed. Garnish with fresh parsley.
- Serve hot with crusty bread or cornbread.
