  • 1.5 lbs beef stew meat, cut into chunks
  • 1 cup pearl barley, rinsed
  • 4 cups beef broth
  • 2 cups water
  • 3 carrots, chopped
  • 2 celery stalks, chopped
  • 2 potatoes, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • Optional: chopped parsley for garnish

Instructions

  1. Add beef chunks, barley, carrots, celery, onion, potatoes, and garlic into your slow cooker.
  2. Pour in beef broth and water, then stir in tomato paste, thyme, salt, and pepper.
  3. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until beef is tender and barley is fully cooked.
  4. Taste and adjust seasoning if needed. Garnish with fresh parsley.
  5. Serve hot with crusty bread or cornbread.
