Creamy shrimp-stuffed baked potatoes combine seafood and comfort food for an indulgent meal.

Ingredients

  • 4 large Russet potatoes
  • 1 lb large shrimp, peeled & deveined
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup shredded sharp cheddar
  • 1/4 cup cream cheese
  • 1/2 tsp paprika
  • Salt & pepper to taste
  • Fresh chives or parsley (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Scrub potatoes, poke with a fork, and bake directly on the rack for 50–60 mins until crispy outside and fluffy inside.
  2. While potatoes bake, heat olive oil in a skillet. Season shrimp with salt, pepper, and paprika. Cook 2–3 mins per side until golden and juicy. Set aside.
  3. In the same skillet, melt butter and sauté garlic for 1 min. Add cream, cream cheese, and cheddar. Stir until melted and thick.
  4. Split open each potato, fluff the inside with a fork. Spoon in a bit of sauce, pile on shrimp, and drizzle with more sauce.
  5. Garnish with chopped chives or parsley and serve hot.
