4 large Russet potatoes
1 lb large shrimp, peeled & deveined
2 tbsp olive oil
2 tbsp butter
2 cloves garlic, minced
1 cup heavy cream
1/2 cup shredded sharp cheddar
1/4 cup cream cheese
1/2 tsp paprika
Salt & pepper to taste
Fresh chives or parsley (for garnish)
Instructions
Preheat oven to 400°F (200°C). Scrub potatoes, poke with a fork, and bake directly on the rack for 50–60 mins until crispy outside and fluffy inside.
While potatoes bake, heat olive oil in a skillet. Season shrimp with salt, pepper, and paprika. Cook 2–3 mins per side until golden and juicy. Set aside.
In the same skillet, melt butter and sauté garlic for 1 min. Add cream, cream cheese, and cheddar. Stir until melted and thick.
Split open each potato, fluff the inside with a fork. Spoon in a bit of sauce, pile on shrimp, and drizzle with more sauce.
Garnish with chopped chives or parsley and serve hot.
