1/2 lb shrimp, peeled and deveined
1 tbsp butter
2 garlic cloves, minced
Juice of 1/2 lemon
1/4 tsp red pepper flakes
Salt & pepper, to taste
1 bag tortilla chips
1 cup mozzarella or Monterey Jack cheese, shredded
1 tomato, diced
1/4 cup chopped fresh parsley
Optional: sour cream or scampi-style dipping sauce
Instructions
Sauté the Scampi Shrimp: In a pan, melt butter and sauté garlic until fragrant. Add shrimp, lemon juice, red pepper flakes, salt, and pepper. Cook until pink and juicy.
Layer Up the Goodness: Spread tortilla chips over a baking tray. Top with diced tomato and the buttery shrimp.
Get That Cheese Melt: Sprinkle shredded cheese over the top and broil until melted and bubbly.
Add a Fresh Finish: Sprinkle chopped parsley and a dash of black pepper.
Serve & Dip: Serve hot with sour cream or drizzle with more scampi butter.
