Shrimp Scampi Linguine is a quick and flavorful weeknight dinner featuring linguine pasta tossed with succulent shrimp in a lemon garlic butter sauce.

Ingredients

  • 1 lb linguine pasta
  • 1 lb large shrimp, peeled and deveined
  • 4 tbsp unsalted butter
  • 3 tbsp olive oil
  • 5 garlic cloves, minced
  • 1/4 tsp red pepper flakes (optional for heat)
  • Zest and juice of 1 lemon
  • Salt and freshly cracked black pepper, to taste
  • 1/4 cup chopped fresh parsley
  • Freshly grated Parmesan, for topping

Instructions

  1. Boil the Pasta: Cook linguine in salted water until al dente. Reserve 1 cup pasta water, then drain.
  2. Sear the Shrimp: In a hot skillet, melt 2 tbsp butter with olive oil. Add shrimp and cook 1-2 mins per side until pink and juicy.
  3. Sauté Garlic & Zest: Add remaining butter, garlic, lemon zest, and red pepper flakes. Cook for 1 minute until fragrant.
  4. Toss It Together: Add drained pasta and shrimp to the skillet. Pour in lemon juice and splash in pasta water as needed. Toss everything together.
  5. Finish & Serve: Season with salt, pepper, and parsley. Top with Parmesan.

Notes

  • For extra heat, increase the amount of red pepper flakes.
  • Feel free to add vegetables like spinach or cherry tomatoes for added nutrition.
