1 lb large shrimp, peeled & deveined
1 tbsp olive oil
1 tsp smoked paprika
1/2 tsp garlic powder
Salt & pepper to taste
1 ripe mango, diced
1 ripe avocado, diced
1/2 cup black beans (rinsed & drained)
1/2 cup cherry tomatoes, chopped
1/4 cup red onion, finely diced
Juice of 1 lime
2 tbsp fresh cilantro, chopped
Salt to taste
2 cups cooked jasmine rice
1/4 cup crumbled feta cheese
Lime wedges (for serving)
Instructions
In a bowl, toss shrimp with olive oil, smoked paprika, garlic powder, salt, and pepper. Sauté in a hot skillet for 2–3 minutes per side until perfectly pink and juicy.
Combine mango, avocado, black beans, cherry tomatoes, red onion, lime juice, and cilantro. Toss gently.
Cook jasmine rice to fluffy perfection.
Add rice to your bowl, top with sizzling shrimp and a generous spoonful of salsa. Crumble feta over the top.
Add a lime wedge on the side, sprinkle extra cilantro if desired.
