- 1 lb large shrimp, peeled & deveined
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt & pepper to taste
- 1 ripe mango, diced
- 1 ripe avocado, diced
- 1/2 cup black beans (rinsed & drained)
- 1/2 cup cherry tomatoes, chopped
- 1/4 cup red onion, finely diced
- Juice of 1 lime
- 2 tbsp fresh cilantro, chopped
- Salt to taste
- 2 cups cooked jasmine rice
- 1/4 cup crumbled feta cheese
- Lime wedges (for serving)
Instructions
- In a bowl, toss shrimp with olive oil, smoked paprika, garlic powder, salt, and pepper. Sauté in a hot skillet for 2–3 minutes per side until perfectly pink and juicy.
- Combine mango, avocado, black beans, cherry tomatoes, red onion, lime juice, and cilantro. Toss gently.
- Cook jasmine rice to fluffy perfection.
- Add rice to your bowl, top with sizzling shrimp and a generous spoonful of salsa. Crumble feta over the top.
- Add a lime wedge on the side, sprinkle extra cilantro if desired.
