1 pack instant ramen noodles
8–10 shrimp, peeled & deveined
1 cup chopped sweet potatoes (small cubes)
1 cup broccoli florets
1 cup bok choy or spinach
1 green onion, chopped
2 cups chicken or vegetable broth
1 tbsp soy sauce
1 tsp sesame oil
1 tsp garlic powder
1/2 tsp ground ginger
1 tsp chili flakes (optional, for heat)
1 tbsp oil for sautéing
Salt & pepper to taste
Instructions
Heat oil in a skillet and cook shrimp until pink and lightly golden.
Boil sweet potatoes in a small pot until fork-tender.
In a saucepan, add broth, soy sauce, sesame oil, garlic powder, ginger, and chili flakes. Let it simmer for 5–7 minutes.
Toss in broccoli, bok choy, and ramen noodles. Cook until noodles are tender and veggies are vibrant.
Pour hot broth and noodles into a bowl. Top with sautéed shrimp, sweet potato chunks, and sliced green onion. Sprinkle extra chili flakes for that kick of heat!
Notes
Adjust chili flakes according to your heat preference.
Feel free to substitute vegetable broth for a vegetarian option.
This recipe can be easily doubled for larger servings.
