A quick and delicious shrimp quesadilla with melty cheese, perfect for a weeknight dinner.

  • 1 lb raw shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup shredded mozzarella or Monterey Jack cheese
  • 1/2 cup diced red bell pepper
  • 1/4 cup finely chopped onion
  • 2 tbsp fresh chopped cilantro
  • 4 large flour tortillas
  • Lime wedges for serving

Instructions

  1. Toss shrimp with olive oil, paprika, garlic powder, salt, and pepper. Sauté over medium heat for 3–4 minutes until pink and juicy.
  2. On one half of each tortilla, layer cheese, sautéed shrimp, bell pepper, and onion.
  3. Fold tortillas in half, pressing lightly. Cook on a skillet over medium heat 2–3 minutes per side until golden and crispy.
  4. Cut quesadillas into wedges and sprinkle with cilantro.
  5. Serve with lime wedges.
