Shrimp Jalapeño Poppers

A quick party appetizer that’s spicy, cheesy, and totally addictive!

Ingredients

  • 10 large jalapeños, halved and seeded
  • 10 medium shrimp, peeled and deveined
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 2 tbsp green onions, chopped (plus more for topping)
  • 1/3 cup seasoned panko breadcrumbs
  • 1 tbsp melted butter

Instructions

  1. Preheat oven to 400°F. Place halved jalapeños on a baking sheet. Lightly roast for 8–10 minutes so they soften slightly.
  2. Toss shrimp in olive oil, paprika, garlic powder, salt, and pepper. Sauté or grill until just cooked — about 2 minutes per side.
  3. In a bowl, mix cream cheese, sour cream, cheddar, and chopped green onion.
  4. Fill each jalapeño half with the cheese mixture. Press a shrimp on top of each, then sprinkle with buttered panko.
  5. Bake poppers for 10–12 minutes until bubbly and browned. Garnish with more green onion and serve warm.

Notes

  • Feel free to adjust the spice level by adding more or fewer jalapeños.
  • These poppers can be made ahead of time and refrigerated before baking.
