Ingredients

  • 2 large flour tortillas
  • 1/2 cup cooked shrimp, chopped
  • 1/2 cup lump crab meat
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced red bell pepper
  • 1 green onion, finely sliced
  • 1 tbsp chopped cilantro
  • 1/2 tsp Old Bay seasoning (optional)
  • 1 tbsp butter or oil (for pan)
  • Salt & pepper to taste

Instructions

  1. In a bowl, combine shrimp, crab, bell pepper, onion, cilantro, Old Bay, salt, and pepper.
  2. Lay one tortilla flat and evenly spread the filling. Top with Monterey Jack and cheddar.
  3. Heat butter in a skillet over medium. Cook quesadilla until golden brown and crisp, about 2–3 mins per side.
  4. Let rest 1 min before cutting into wedges.
  5. Serve with sour cream, avocado slices, or spicy aioli if desired.

Notes

  • Feel free to customize with your favorite seafood or additional spices.
  • For a healthier option, use whole wheat tortillas.
