- 2 large flour tortillas
- 1/2 cup cooked shrimp, chopped
- 1/2 cup lump crab meat
- 1 cup shredded Monterey Jack cheese
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced red bell pepper
- 1 green onion, finely sliced
- 1 tbsp chopped cilantro
- 1/2 tsp Old Bay seasoning (optional)
- 1 tbsp butter or oil (for pan)
- Salt & pepper to taste
- In a bowl, combine shrimp, crab, bell pepper, onion, cilantro, Old Bay, salt, and pepper.
- Lay one tortilla flat and evenly spread the filling. Top with Monterey Jack and cheddar.
- Heat butter in a skillet over medium. Cook quesadilla until golden brown and crisp, about 2–3 mins per side.
- Let rest 1 min before cutting into wedges.
- Serve with sour cream, avocado slices, or spicy aioli if desired.
Notes
- Feel free to customize with your favorite seafood or additional spices.
- For a healthier option, use whole wheat tortillas.
