1/2 lb large shrimp, peeled, deveined, chopped
1/2 cup lump crab meat
1/2 red bell pepper, finely diced
1/2 green bell pepper, finely diced
1/2 yellow onion, finely diced
1 tsp fajita seasoning (or taco seasoning)
1 tbsp olive oil
4 oz cream cheese, softened
1 cup shredded Monterey Jack cheese
6 flour tortillas (soft taco size)
2 tbsp fresh cilantro, chopped
Salt & pepper to taste
Instructions
In a hot skillet with olive oil, cook bell peppers and onions until soft. Add shrimp, crab, fajita seasoning, salt & pepper. Sauté until shrimp is just cooked.
Remove from heat and stir in cream cheese and half the shredded Monterey Jack.
Lay out tortillas, spread the filling evenly, and roll them up tightly. Slice each roll in half.
Place rolls seam-side down in a greased baking dish. Sprinkle remaining cheese on top and bake at 375°F for 15–20 minutes until golden and bubbly.
Top with chopped cilantro and serve hot.
Notes
These rolls are perfect for sharing as snack-style portions.
Feel free to adjust the spice level by adding more fajita seasoning.
