1 cup cooked shrimp, chopped
1 cup cooked crab meat (real or imitation)
1 red bell pepper, thinly sliced
1 yellow onion, thinly sliced
1 tsp fajita seasoning
1 cup shredded mozzarella cheese
1 cup shredded Monterey Jack cheese
6 large flour tortillas (or thin wraps)
2 tbsp olive oil
2 tbsp cream cheese, softened
½ tsp garlic powder
Salt & pepper to taste
Fresh parsley or cilantro, for garnish
Instructions
Sauté the Fajita Filling: In a hot skillet with olive oil, sauté bell pepper and onion until tender. Toss in shrimp, crab, fajita seasoning, garlic powder, salt, and pepper. Cook until warmed through.
Build the Creamy Base: In a bowl, mix cream cheese with half the mozzarella and Monterey Jack.
Fill and Roll ‘Em Up: Lay tortillas flat. Spread a layer of cheese mix, then top with the hot shrimp-crab fajita mixture. Roll tightly and place seam-side down in a greased baking dish.
Smother in Cheese and Bake: Sprinkle the remaining shredded cheese over the top. Bake at 375°F (190°C) for 15–18 minutes, or until golden and bubbly.
Garnish & Serve Hot: Finish with chopped parsley or cilantro. Serve with salsa, guac, or sour cream.
Notes
For a spicier kick, add jalapeños to the filling.
These rolls can be made ahead of time and baked just before serving.
