  • 2 large russet potatoes, scrubbed
  • 1 tbsp olive oil
  • 1 lb shrimp, peeled and deveined
  • 1 tbsp butter
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt & pepper to taste
  • 2 tbsp chopped chives (for garnish)
  • 2 tbsp butter (for cheese sauce)
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 1 ½ cups shredded sharp cheddar cheese
  • ½ tsp garlic powder (for cheese sauce)
  • Salt & pepper to taste (for cheese sauce)

Instructions

  1. Rub potatoes with olive oil, sprinkle with salt, and bake at 400°F for 45–50 minutes until skins are crisp and insides are fluffy.
  2. In a hot skillet, melt butter and toss in shrimp with garlic powder, paprika, salt, and pepper. Cook 3–4 minutes until pink and juicy.
  3. In a saucepan, melt butter and whisk in flour until smooth. Slowly add milk, stirring constantly. When thickened, stir in cheese and seasonings.
  4. Slice open baked potatoes, fluff the inside with a fork, and pour over the hot cheese sauce. Pile on the sautéed shrimp.
  5. Garnish with chopped chives and serve immediately.
