SHRIMP AND AVOCADO BOWLS WITH MANGO SALSA & LIME-CHILI SAUCE

A fresh, zesty, and colorful dish, Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce combine juicy shrimp, creamy avocado, sweet mango salsa, and a tangy lime-chili yogurt sauce over fluffy rice. Perfect for a tropical, healthy, and easy dinner.

Ingredients

  • 500g large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Juice of 1/2 lime
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 small tomato, diced
  • 1 green chili or jalapeño, minced
  • 2 tablespoons fresh coriander, chopped
  • Juice of 1 lime
  • Salt to taste
  • 2 cups cooked jasmine or basmati rice
  • 1 ripe avocado, sliced
  • Chopped fresh coriander, for garnish
  • 3 tablespoons Greek yogurt or sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon chili flakes or hot sauce
  • 1 teaspoon honey (optional)
  • Salt to taste

Instructions

  1. Toss shrimp with olive oil, garlic, chili powder, paprika, lime juice, salt, and pepper. Let marinate for 10 minutes.
  2. Meanwhile, mix all mango salsa ingredients in a bowl. Let sit to absorb flavors.
  3. In a small bowl, whisk together all ingredients for the lime-chili sauce. Set aside.
  4. Heat a skillet over medium-high heat. Cook shrimp for 2–3 minutes per side until golden and cooked through.
  5. Assemble bowls: rice at the bottom, top with shrimp, mango salsa, avocado slices.
  6. Drizzle with lime-chili sauce and sprinkle with chopped coriander. Serve immediately!

Notes

  • Serve with tortilla chips for a crunch
  • Add shredded cabbage for extra texture
  • Squeeze fresh lime over just before serving for brightness
  • Use firm mangoes for best salsa texture
  • Don’t overcook shrimp—they’re done when opaque and curled
  • For a vegan version, swap shrimp with grilled tofu or chickpeas
