  • 3 tbsp unsalted butter
  • 1 garlic clove, minced
  • Juice of 1 lemon
  • Zest of 1/2 lemon
  • 1 tbsp fresh parsley, chopped
  • Fresh dill and lemon slices for garnish (optional)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season scallops with salt and pepper, then sear for 2 minutes per side until golden brown.
  2. In the same pan, reduce heat to medium-low. Add butter and garlic, cooking until fragrant. Stir in lemon juice and zest.
  3. Return the scallops to the pan, spoon the sauce over them, and let simmer for 30 seconds.
  4. Spoon sauce onto a plate, lay scallops on top, and garnish with chopped parsley, fresh dill, and lemon slices.
  5. Serve warm with crusty bread or over creamy risotto.
