A delicious seafood twist on classic stuffed peppers featuring crab, shrimp, and creamy cheese filling.

Ingredients

  • 4 large bell peppers (red or yellow)
  • 1 cup cooked shrimp, chopped
  • 1 cup lump crab meat
  • 1 cup cooked rice (white or jasmine)
  • 1/2 cup shredded cheddar cheese (plus more for topping)
  • 1/4 cup mayonnaise
  • 2 tbsp cream cheese, softened
  • 1 tsp Old Bay seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 tbsp chopped parsley (plus extra for garnish)
  • Salt & pepper to taste
  • Olive oil for brushing

Instructions

  1. Slice off tops of the bell peppers, remove seeds, and brush with olive oil.
  2. In a bowl, mix chopped shrimp, crab meat, rice, mayo, cream cheese, cheddar, and seasonings.
  3. Spoon the filling into each bell pepper generously.
  4. Sprinkle more cheddar on top of each stuffed pepper.
  5. Bake at 375°F (190°C) for 25–30 minutes until melty and golden.
  6. Remove from oven, sprinkle with chopped parsley, and serve hot.

Notes

  • Use fresh seafood for best results
  • Adjust seasoning to your taste
  • Can substitute with other seafood if preferred
