1 lb shrimp, peeled and deveined
1/2 lb lump crab meat
12 oz smoked sausage, sliced
1/2 cup vegetable oil
1/2 cup all-purpose flour
1 onion, finely chopped
1 green bell pepper, chopped
2 celery stalks, chopped
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
4 cups seafood stock (or chicken broth)
1 tsp Cajun seasoning
1/2 tsp thyme
2 bay leaves
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Cooked white rice, for serving
Saltine crackers, for serving
Instructions
In a large pot, whisk together flour and oil over medium heat, stirring constantly until the mixture turns a deep brown (about 10–15 minutes) to make the roux.
Add onions, celery, and bell pepper into the roux. Cook until softened, about 5 minutes. Stir in garlic and cook for 1 more minute.
Add sausage, diced tomatoes, Cajun seasoning, thyme, bay leaves, and seafood stock. Bring to a boil, then reduce heat and simmer for 30 minutes.
Gently stir in shrimp and crab meat. Cook just until the shrimp turns pink, about 5 minutes.
Serve gumbo over warm white rice, garnish with chopped parsley, and serve with saltine crackers on the side.
Notes
Use fresh seafood for the best flavor.
Adjust the Cajun seasoning to your spice preference.
