  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1/2 cup onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1/4 cup all-purpose flour
  • 2 cups chicken or seafood broth
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1/2 tsp smoked paprika
  • Salt and black pepper (to taste)
  • 1/2 lb shrimp (peeled and deveined)
  • 1/2 lb scallops (or substitute with crab meat or white fish)
  • Fresh parsley (chopped (for garnish))

For the Bread Bowl:

  • 1 large round sourdough bread loaf
  • 1 tbsp melted butter

Instructions

1️⃣ Prepare the Bread Bowl:

  1. Preheat the oven to 375°F (190°C). Cut off the top of the bread loaf and hollow out the inside, leaving about 1-inch thick walls. Brush the inside with melted butter. Bake for 10 minutes until slightly crisp.

2️⃣ Make the Chowder Base:

  1. In a large pot, heat olive oil and butter over medium heat. Sauté the onion until translucent, about 3-4 minutes. Add garlic and cook for 1 minute. Stir in the flour and cook for another 2 minutes, whisking constantly.

3️⃣ Add Broth and Cream:

  1. Gradually pour in the broth, stirring continuously to avoid lumps. Add the heavy cream, milk, smoked paprika, salt, and pepper. Simmer for 10 minutes, stirring occasionally.

4️⃣ Cook the Seafood:

  1. Add the shrimp and scallops to the chowder. Simmer for 5-6 minutes until the shrimp are pink and the scallops are tender.

5️⃣ Assemble and Serve:

  1. Pour the hot seafood chowder into the bread bowl. Garnish with fresh parsley and serve immediately while warm.
