- 1 tablespoon olive oil
- 1/2 cup onion, finely chopped
- 1/2 cup celery, diced
- 1/2 cup carrot, finely diced
- 3 cloves garlic, minced
- 1/4 cup tomato paste
- 1/4 cup all-purpose flour
- 4 cups seafood stock (or chicken broth)
- 1 cup heavy cream
- 1/2 cup dry white wine (optional)
- 1/2 lb cooked shrimp, chopped
- 1/2 lb cooked lobster meat, chopped
- 1/2 lb lump crab meat
- 1/2 tsp Old Bay seasoning
- Salt & pepper, to taste
- 1 tbsp fresh parsley, chopped (plus more for garnish)
- In a large pot, heat olive oil. Add onion, celery, carrot, and garlic. Cook 4–5 minutes until soft and fragrant.
- Stir in tomato paste and flour to coat the veggies—cook for 2 minutes.
- Slowly whisk in white wine and seafood stock. Bring to a simmer and cook for 10–12 minutes.
- Stir in heavy cream, Old Bay, salt, and pepper. Add the shrimp, lobster, and crab. Let simmer for another 5 minutes.
- Ladle into bowls, garnish with parsley, and serve with crusty bread.
Notes
- This bisque can be made ahead of time and reheated before serving.
- Feel free to adjust the seafood types based on your preference.
- For a spicier kick, add a pinch of cayenne pepper.
