2 tbsp granulated sugar
2 tsp baking powder
¼ tsp salt
1 large egg
1 cup whole milk (or buttermilk for extra fluffiness)
2 tbsp melted butter (plus more for the pan)
1 tsp vanilla extract
Maple syrup, powdered sugar, and berries for topping
Instructions
In a bowl, combine flour, sugar, baking powder, and salt. In another bowl, whisk egg, milk, vanilla, and melted butter. Stir until you get a smooth, pourable batter.
Heat a non-stick pan over medium heat with a dab of butter. Pour batter into the pan like you’re making one big pancake, then immediately scramble and flip it into fluffy bites.
Keep flipping gently until all pieces are cooked through and golden brown on every side.
Plate your bites and drizzle generously with maple syrup. Dust with powdered sugar and add fresh berries.
Serve warm and enjoy as an easy brunch idea or mid-day snack.
Notes
For extra fluffiness, use buttermilk instead of whole milk.
Adjust the sweetness by varying the amount of sugar in the batter.
