Ingredients

  • 1 cup almond flour
  • 1 3/4 cups powdered sugar
  • 3 large egg whites (room temperature)
  • 1/4 cup granulated sugar
  • 1 teaspoon fresh thyme leaves, finely chopped
  • Pinch of salt
  • 4 oz cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 1/4 cup finely chopped toasted walnuts
  • 1 tablespoon honey
  • Fresh cracked black pepper to taste

Instructions

  1. Sift almond flour and powdered sugar together. Mix in chopped thyme and salt.
  2. In a clean bowl, beat egg whites until foamy. Gradually add granulated sugar and whip to stiff peaks.
  3. Gently fold dry mixture into egg whites until batter flows like thick lava.
  4. Pipe small rounds onto parchment-lined baking sheets. Tap trays to remove air bubbles.
  5. Let rest 30–45 minutes until tops form a skin.
  6. Bake at 300°F (150°C) for 14–16 minutes. Cool completely.
  7. Beat cream cheese and butter until smooth. Mix in honey, walnuts, and black pepper.
  8. Pipe filling onto half the shells and sandwich with remaining shells.

Notes

  • Use a kitchen scale for precise measurements.
  • Don’t overmix the batter or shells will spread.
  • Store in refrigerator 24 hours for best flavor and texture.
