- 1 cup cooked lentils
- 2 large eggs
- ½ small onion, diced
- 1 small red bell pepper, diced
- 1 clove garlic, minced
- 1 tbsp olive oil
- ½ tsp smoked paprika
- ½ tsp cumin
- Salt and black pepper to taste
- 2 tbsp chopped fresh parsley or cilantro
- Chili flakes (optional)
- Toast or avocado slices (optional)
- Heat olive oil in a skillet over medium heat. Cook onion, garlic, and bell pepper until softened.
- Stir in the cooked lentils, paprika, cumin, salt, and pepper. Cook for 3–4 minutes until warmed.
- In a separate pan, fry the eggs sunny-side up until the whites are set.
- Spoon the warm lentils into a bowl and top with the fried eggs.
- Sprinkle parsley, chili flakes, and extra pepper on top. Serve with toast or avocado.
