1 whole wheel of Brie (8 oz)
2 tbsp olive oil
2 garlic cloves, minced
1 tbsp fresh rosemary, finely chopped
1 tbsp fresh thyme, chopped
1 tbsp parsley, chopped
1 tsp chili flakes (optional for kick)
1 tsp honey (for a sweet-savory balance)
1 tbsp dried cranberries or sun-dried tomatoes, chopped
Crackers or toasted bread, for serving
Instructions
Preheat your oven to 375°F (190°C). Unwrap the Brie and place it on a small parchment-lined baking sheet or oven-safe dish.
In a small pan over medium heat, combine olive oil and minced garlic. Cook for about 1 minute until fragrant. Add rosemary, thyme, and parsley. Sauté for another 30 seconds.
Stir in chili flakes, honey, and chopped cranberries or sun-dried tomatoes. Cook for 30 more seconds, then remove from heat.
Spoon the herby garlic mixture evenly over the top of the Brie. Bake for 12–15 minutes or until the center is soft and gooey.
Let it cool for 2–3 minutes, then serve immediately with crackers or toasted bread.
