  • 2 smoked sausages (sliced into rounds)
  • 1 medium zucchini (sliced)
  • 1 cup bell peppers (mixed colors, chopped)
  • 1/2 cup cherry tomatoes or diced Roma tomatoes
  • 1/2 small onion (diced)
  • 1 clove garlic (minced)
  • 1 tbsp olive oil
  • 2 cups cooked rice (white or brown)
  • Salt, pepper, and Italian seasoning to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add sausage slices and cook until browned and slightly crispy.
  2. Toss in onions, zucchini, and bell peppers. Cook for 4–5 minutes until tender but still vibrant. Add garlic and tomatoes, cooking just until softened.
  3. Sprinkle with salt, pepper, and a pinch of Italian seasoning. Stir everything together.
  4. Spoon hot cooked rice into serving bowls, then top with the sausage and veggie mixture.
  5. Garnish with fresh parsley if desired. Serve hot.
