- 1 tbsp olive oil
- 1 lb Italian sausage (mild or hot)
- 1 yellow onion, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 tsp Italian seasoning
- 1/4 tsp crushed red pepper flakes (optional)
- 1 (14.5 oz) can diced tomatoes (drained slightly)
- 4 cups chicken broth
- 1 cup heavy cream
- 9 oz refrigerated cheese tortellini
- 2 cups fresh kale, chopped (stems removed)
- Salt & cracked black pepper, to taste
- Freshly grated parmesan cheese, for topping
- In a large pot over medium heat, cook the sausage until nicely browned and crumbly. Drain if needed, and set aside.
- In the same pot, add olive oil, diced onions, and celery. Cook until soft and translucent. Stir in garlic, Italian seasoning, and red pepper flakes.
- Pour in the chicken broth and the diced tomatoes. Bring to a simmer and let the flavors blend.
- Stir in the heavy cream and tortellini, then let simmer for about 7–8 minutes, or until the tortellini are tender.
- Stir in the kale and simmer just until wilted (about 2 minutes). Taste, season with salt and cracked pepper, and top with parmesan.
Notes
- For a spicier soup, use hot Italian sausage.
- Feel free to add other vegetables like carrots or bell peppers.
- This soup can be stored in the refrigerator for up to 3 days.
