- 14 oz smoked sausage or kielbasa, sliced into rounds
- 1/2 head green cabbage, chopped
- 1 cup red cabbage, chopped (optional for color!)
- 1 red bell pepper, thinly sliced
- 1/2 green bell pepper, thinly sliced
- 2 green onions, sliced (plus extra for garnish)
- 2 tbsp soy sauce (low sodium)
- 1 tbsp sesame oil
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1 tsp grated fresh ginger (or 1/2 tsp ground)
- 1/2 tsp crushed red pepper flakes (optional)
- 1 tbsp sesame seeds (black or white)
- Salt and black pepper, to taste
- Heat olive oil in a large skillet or wok over medium-high heat. Add sausage rounds and sear until golden and crispy on the edges.
- Add garlic, ginger, and both bell peppers to the skillet. Stir-fry for 2–3 minutes until fragrant and slightly tender.
- Toss in chopped green and red cabbage. Stir-fry for another 5–6 minutes until cabbage softens but still has a nice bite.
- Drizzle in soy sauce, sesame oil, red pepper flakes, and a dash of salt and pepper. Stir everything well.
- Sprinkle in sesame seeds and sliced green onions. Serve immediately.
Notes
- This dish is low-carb and can be customized with your favorite vegetables.
- For added heat, increase the amount of crushed red pepper flakes.
- Leftovers can be stored in the refrigerator for up to 3 days.
